Dave,The primaries on the LL1623 should be in series for single-ended use. For a parallel pair of triode-connected 5881s I would use the transformer wired for 3K primary. Pursuant to your comment about the speakers I would also start with the 8 ohm connection. So you use the "LL1623 Primmary connection for single-end output stage", where pin 4 goes to both 5881 anodes, and the "C" secondary connection, both diagrams on the last page of the datasheet.
