How do you wire this cable? There are 3 conductors. Normally in a balanced cable there are 2 conductors plus a shield. Here there are 3 conductors plus a shield.

The 3rd conductor is a ground wire. It is unnecessary to use a separate ground conductor for either a balanced or unbalanced interface, so simply connect it to ground at the source end of the cable, and leave it floating at the load end of the cable.

That is the weirdest thing. Why did they do that? What about soldering the shield to the 3rd contact like with a regular balanced XLR?

The shield should be connected to ground at the source end, and left floating at the load end. The 3rd conductor is likely intended for those who wish to implement a reference to ground for a balanced interface, but doing so is unnecessary and detrimentally effects the sound of the return signal for a typical home audio application, IME.
