you are correct but since the 14dB hookup isn't needed it might be worth looking at paralleling windings 1-2 with 5-6 and 3-4 with 7-8 and then the switching arrangement will work.

26db position is right.
In the 20db position 2,6,3 and 7 are bound together
That shouldn't matter since they all form what would be a center tap and should be at the same potential. It would actually be interesting to leave the cartridge floating and simply get the ground reference via the center tap and see what happens.

You may want to preliminarily wire the transformer as instructed and do a frequency sweep and then connect the "center taps" together and see if that changes anything just to be safe. As I said it shouldn't matter but then again these things can be rather complex in their behaviors so better safe than....
