My local store can have absorb panels made (the ones they actually use. Pretty nice/professional looking IMO don't know whether it's comparable to the echobuster stuff).Anyhow since it is custom built I just need to measure things. Should I just go with one big slab of panel or should I get some uniform sizes and space them apart?

Foam that is only a few inches thick will not absorb down very low, and the number one major mistake that folks make when trying to treat a room, is to use too thin of a material, and then try to make up for it by using more area.
Properly placed and thickness material does not need to cover half the room, etc., and keep in mind that spacing ANY absorbing material slightly away from the wall, just a few inches, can increase the LF absoprtion quite a bit. Flush up against the wall wastes a lot of the capability.
As long as they're a reasonable size, two smaller would usually be a bit better than one larger. If you place them opposite each other, offset one by a couple of inches so they aren't exactly opposite - that helps get a bit better effect as well.
