The number of "poles" is the number of channels which can be controlled at the same time. For example, if you were building a stereo volume switch you'd want a 2 pole, one for the right and one for the left. This would allow you to adjust both channels with a single turn (instead of needing two switches).So, you're only using one channel and therefore you can buy any switch and just use one pole's worth. Simply leave the rest of the switch "blank".
