I'm using the Mullard CV4003 and I was about to buy a backup when I thought I should check for a better Mullard 12AU7 version so I can use the better version and keep the CV4003 as the backup. Any recommendations? Are the M10 or the CV491 better than the CV4003?

It depend on the gear/circuit. What are you using it in?
The 1950s long plates are my favorite Mullard 12AU7s.Have you tried Telefunken ECC802S ? Wow!

If you can't get the 50s long plates which are rare, try for Mullards Blackburn coded with non military Mullard logos. Your best bet is to use a good vendor/dealer, although their services for that tube will be costly. Check some threads for suggestions for dealers,
If you want a Mullard like sound consider the Gold Lion Russian tube.
