This will be my first experience with 5687, will be the tubes used in a modded cd player. Looking for sweet, airy, detailed, holographic with some warmth but not overly warm.

Since your use is different than mine it will probably be better to roll various tube brands to see which you like best.
I've used Tungsol (USA) 5687 in several apps. Nice tubes.
Maybe a pair of the top three 5687 or equivalent.

for the amount of current they can handle. But i don't know if that is such a good sounding thing. In my amp as driver tube, which is not the same as a pass tube in a CD player, they sounded "dark" and by that the highs were somewhat recessed compared to the lows. But the 7119 had a better frequency spread with no frequency dominating any other.
