I have an upgraded transformer so I think I am fine putting a GZ33 into my Dynaco ST-70. But the thought did cross my mind that if the GZ33 is supposed to pull 3 amps versus the 1.9 of the GZ34 do I need to put a larger fuse in the Dynaco than the 3 amp fuse I have in there? I guess it seems like I obviously should.

Not to worry. The additional 1.1 amps @5 volts translates to about 0.046 amps on the 120 volt side.

IIRC the original instructions said using the 5U4 was OK. It has the same 3A filament so the '33 should be OK too.
