It will be more versatile. Besides slow power up i plug my soldering iron it to fine control the temperature and also to avoid thermal shock to the plated tip. I usually replace the fuse with a 5 or 6 amp rated one as a safety measure to prevent new years type shorts.

I came across the pic ( hope it comes through with my post ) while researching my variac thread. She would get my voltage up in a hurry! To late for the variac at that point :)
