Midi will allow you to use a keyboard controller (I like the reasonably priced Novation Impulse), the iPad being the sound engine, presets and tone shaping control.

So the Novation Impulse is used as an external keyboard to the iPad? And the iPad creates the sound - which could be output to an amp/speakers?

  Yes. The Impulse creates no sounds or audio output on it's own. It's overkill for the casual user (designed or work with Apple's Logic Pro X recording studio and Ableton Live 10 DJ/Production software). You could get something more basic for $99.
