Well, sure you could do that, but you had said your Mac Mini was 'on all the time'..... So what else are you using the Mac Mini for?We have a new (Very Fast Lenovo Desktop) in our Home Office that is also on all the time, so that is a great place to run LMS.
You could give it try with your current RPi and see if it works with one of them..... Maybe if you can't hear a difference, you would not even have to buy another one.
BTW - I can even run LMS on my Synology NAS System, but since my Desktop is always on, and in use most of the time by my wife and I, I choose to run LMS on it.

Especially if we can take it one step beyond just using the Raspberry Pi as the LMS host and hook a USB hard drive to it which has my ripped CDs on it?
Am I dreaming or is that possible.
Why would you care if a Mac Mini is 'on all the time' vs. a RPi that is 'on all the time'.....It's probably possible, but I have not done it...... Why don't you try it and report back to us. You can do this with 1 Rpi... But the audiophiles will tell you that they can hear bad things when you do this. But, at least you'll know it will work before you order another Rpi.
I think you are headed in the direction of a NAS now...... Why don't you investigate a NAS. Lots of features and much faster than USB disk storage..
I have one at home, and can access my storage anywhere in the World with internet....

If anything, one would think it the other way round?
But yes, we do look to be heading in the general direction of a NAS with LMS running on the NAS and be done with it.
Rip CDs to the NAS from any room in the house with a computer? Works for me. NAS drive in the garage next to the router?

And understand that I have no idea, as I have never tried it....

One Pi running LMS somewhere in the house attached to the network and a second with HiFiBerry Digi+ Pro running as a player. Mostly used for streaming TIDAL and QOBUZ so who cares is the computer with the music on the hard drive is even up and running.
Wife likes to turn things off, not standby, OFF.
It's technically possible, but I've never tried it. I have always had LMS running on my Desktop System, which always stays on for other duties.
