I know just what you mean. The fragrance of beer should be noticeable, but not overwhelming. If it's overwhelming, that means: (1) Patrons are spilling their beer all over the place, and thus are very drunk; and (2) Nobody is bothering to clean up after them. The latter smell is readily available in the stands at any number of professional sports events.
If the predominant smell is food, you're in a restaurant, not a bar. If the predominant smell is wine, you're in the San Francisco Bay area. ;-)
My neighborhood is gentrifying and all my favorite old dives are being torn down or remodeled...to look like old dives.
When I saw your heading, I immediately thought, "He's talking about a dive, not a bar". Sure enough! McSorley's Old Ale House in New York, where people stopped in for a brew after listening to Presidential hopeful Abraham Lincoln's campaign speech at Cooper Union down the street, and where women weren't allowed until the 1970s, closed last year due to health code violations. I guess there wasn't enough sawdust on the floor.
Now, that was a dive.

For those of us back east, a "dive" is a bar with health code violations. A "night spot" or just a "spot" is a bar with good live music. A "grill" is a bar with burgers, originally called a "bar and grill", but that's become archaic. A "Ye Old Publicke Ale House" is, in rare cases like McSorley's, a genuine old ale house, but much more commonly is a pretentious, overpriced tourist trap.
