I was having such a good time at my party that I didn't take many pics. Others did, but I didn't. So, unfortunately, no pic of the roast. But it turned out incredibly well. Between my wife, my cousin, and me, I think we did a great job. Not bad for a carnivore (cousin), a vegetarian (wife), and an incompetent (guess who). :)
Let's just say, between the roast, the sides, and my wife's cannoli cake, everyone went home happy!

Yes, you read that right. Cake on the grill. :)
Despite the less-than-ideal circumstances, it actually turned out really good. Sooooo rich!!!

Glad it worked out. I wouldn't want to bake a cake on the grill, but I have one that is capable.
We have an axilillary whole house generator, because of where we live (hurricane country). Now we never lose power. That's how it works.
Yeah, as I said, certainly not ideal, but my wife made it work!
We have a generator as well, but the oven isn't connected to it. Would've been too big of a draw.

THAT is WAY out there! Baking a cake on a grill is not easy. My wife is really good at baking cakes, pies, cookies, brownies, etc., but if I asked her to try it on the grill, she'd probably look at me quizzically and say "ummmm... no".
:)
Some grills have racks and plates that can be installed between the fire and the grill surface for indirect smoking/cooking. These grills become ovens more or less. My grill does this. You can basically grill without the bottom grates and plates or slow cook or bake when the plates are in place. I would still prefer an indoor oven for baking something.
My wife doesn't like being told she can't do something! :) She's always looking for solutions. Wish I had that trait!

Our generator is 20 KW. It will run anything we have. I have a smaller Honda generator and a small window AC as a backup in case the big one doesn't run. After one storm the Generac quit after two days and we baked for a week, thus contingency upon contingency. The Boy Scout motto, be prepared.
