The closest candidate in a small output is the LL1682/XXmA, which would be 8.8K:8ohms with a 50% tap.

That should work just fine. Now, how would I configure the connections
to get these results. The pdf doesn't say.

In the data sheet diagram of the SE connection, use either of the jumper connections between pins 5 and 11 as the UL tap.

That should work fine, just out of curiosity what UL percentage would I get
if I used either the 3 pin or the 9 pin as the UL tap.

Wouldn't one tap have a higher ratio than the other?
Doing the math using the turns ratio I get around 17% on one pin
and around 83% on the other. Possibly I am way off here?

You are correct. I was only quoting the nearest tap to B+.
