Straight out of my community garden plot. My summer vegetables are ripening fast, especially tomatoes, peppers, & eggplant. Much more than I can eat right now. So I'm learning how to turn these vegetables into my long-term stash. Have already frozen cauliflower, did that some weeks ago. Very soon I will be freezing the peppers you see. I'll cut them up first and remove the seeds. Preserving the tomatoes is bit more complicated. I turn them into Marinara sauce, also using the onions and peppers. I then freeze the Marinara sauce for later use. Haven't figured out how to preserve squash yet. The variety you see in the photo is crookneck, and I've also got butternut and delicata on the vine. The beans are just beginning to ripen and they will probably freeze well. I've got lots of eggplant still on the bush, and don't know if there is a good option for longer term storage.
Anybody else growing vegetables? What's in your vegetable garden and what are you harvesting?

Those tiny tomatoes, fried up gently with some basil in a pan are just the best things with toast in the morning ;-)

Mine are all done. Have been since early July. Too goddamn hot to grow anything now.
I still have a few peppers out, but onions, leeks and tomatoes are all done, although planting for me starts at the end of January.
Have been working on a gardening experiment the last week or so. I've been using cages for my tomatoes forever. Some of the cages are getting pretty feeble from use and need replacing. New cages are WAY more expensive than they used to be, so looking at trellising the tomatoes using bamboo poles instead of cages. Have been boning up on tying clove hitches, along with my wrapping/frapping skills for square and shear lashings. Aside from rusting away, the cages do a piss poor job of supporting the vines after they get five or six feet long. Trellising should do much better at supporting long vines. I have a test setup in place and all indications are that I'm good to put the change into production next year.
Your takings look delicious. I'm sure you'll enjoy them come eating time. I find it very cathartic. Growing vegetables, that is. Those poblanos look particularly good. I grew mariachi and cubanelle peppers this year. The cubanelles will be in the garden again next year. Just a touch of heat and tons of fruity pepper flavor.
