"Should I choose a DAC among those using the ESS Sabre? "
These days? Not a bad choice at all! There are also great sounding DAC's using other chips as well, but Sabre is very highly regarded.
But in 6 months, it'll be different. And 6 months after that as well!
I'd follow the advice I give myself for computers - get the best one you can ... and hold on to it as long as you can before upgrading. It isn't like a turntable which is relatively mature as a technology.

Eventually, there will be some "miracle" 64 bit 5 MHz DAC chips, and some will be bragging how their "old and outdated" Sabre DAC chips still "beat them handily," just like how it was with BB ladder chips, and before that various NOS DAC chips..

You could probably consider FPGA's under the "64-bit 5MHz DAC chip" category, which means they're already here! It's just that they don't have an audiophile-specific name or part number. :-)
when that new chip comes out IT will be the flavor of the month, get all the press and all the Dac manufacturer will use it to make a profit.
If the fish are biting M&M's this month, then put M&M's on your hook.
It could go either way....
