As far as currently complete sets, I really like the Askenazy set on London/Decca where he conducts the Philharmonia Orchestra from the keyboard. Very good sound though it's standard CD resolution. Not a fan of Peraiah's set - a bit too straight-laced and unimaginative for me.
There is an unfolding set on Chandos in great sound (though, unfortunately not in SACD) with Jean Effram Bazouvet. I have all of the CD's so far (6 volumes) and they are very good performances in wonderful sound. I imaging it will be completed over the next couple of years - maybe Chandos will issue a box in the future.
I had high hopes for a series with Martin Helmchen on Pentatone SACD but, alas, it seems only two SACD's were issued. No others have been forthcoming. That could have been a hi-rez benchmark had it continued.

I am bothered by it somewhat, too, though I'm not sure that "straight-laced" is how I'd characterize why. I might prefer "controlling", but I'm not sure that's entirely right either. I must say, nevertheless, that I often very much like Perahia, just not to much within this box.

The nice thing about those albums in the Mozart/Bavouzet series on Chandos is that they all seem to be available as stereo 24/96 downloads at the Chandos site (although I'm seeing only five volumes right now - maybe the sixth will be along presently?), so at least they're hi-rez. And I hardly ever feel that the Chandos engineers have miscalculated in their microphone "strategies" in the last couple of decades (especially if you like a "big" enveloping sound - but with clarity still maintained). I agree with you that the Bavouzet set might be the one to go for, even though it's incomplete so far.
