If this is the single core stuff I am seeing online, you'll have to twist a pair up to make what amounts to, technically, an shielded twisted pair. Given the size and stranding, this should be quite flexible. However, I can't say how well these types of conductors would "twist" - very often stranded single-core wires don't remain twisted that well and require some heat shrinking or braiding to get them to stay put.
Another way to go is to braid the conductors using a third wire. The third wire can be inexpensive stuff such as type TEW or TWU.
In any case, whether you manage to use twisting, or some sort of braided jacket, or weaving three conductors in a twisted triad, I think the final product will be quite flexible and suitable for being moved around.
A simple twisted pair is not a shielded twisted pair, since an external shield is required to technically be a shielded twisted pair.
I think you meant stranded conductors don't tend to remain tightly twisted, while single core (solid core) conductors do.
Yes, that first line should have read UNshielded twisted pair...
