I played with Audacity and VinylStudio a bit today. My key problem is that the cassettes that I recorded had a 10db+ difference between the left and right which is plenty great enough to notice. Audacity lets you shift R/L balance, but that drops the level of the good channel. It seems to sound quite good though, most is from CDs that I have and some are records, you can only tell from the lead in tics.
VinylStudio won't do that, but seems to have a simpler way to break and name tracks. We'll see when I get down the line.
