AES/EBU are usually around 5V p-p while s/pdif input expects about 0.5V.
There are several schemes for resistor attentuators, which retain the correct terminations on the AES/EBU side. This would be the right way to go.
I would not worry about the connector matching 75 ohm. It's small and has a miniscule effect overall. You will need a custom cable with the resistive attenuator built into the XLR housing. I would also suggest to add a small series capacitor, to make the converter "safe for all occasions"...
The circuit shown in the link may do the job but I haven't tried it myself. Personally I prefer a balanced attenuator, as in the picture.
