The current draw is determined by the circuit drawing the current. As long as your phono stage is working properly, it will draw only as much as it needs. As long as the voltage is correct, all will be okay.
Be very certain of the voltage and polarity before you start experimenting. A power supply may say 18 volts but may read much higher under some conditions. Have fun!
