I would assume the seller is referring to an electrically controlled hydraulic device that changes the angle of the motor. This is very nice to have, especially with a heavy motor, but not necessary. Trim can be adjusted manually, though not while underway, of course.
As far as what trim "is"....it's the posture of your boat. For instance, running with the bow too high or too low, or listing to one side or the other.
