AFAIR, it doesn't take very much to complete the third movement

It's almost fully written our in piano score, but with only a few measures of orchestration. I think that all it really requires is a little connecting passage and the orchestration.

It's the fourth movement that's the problem. I used to have the Marriner set of Schubert Symphonies, and they used a part of the Rosamunde incidental music as the fourth movement. I thought it worked out OK, but I'm certainly interested to know what Venzago has done in his own completion.
