Hi - dunno - may be case by case - I have an EICO HF-87 - with typical cathode-coupled 6SN7 phase-inverter driving the ultralinear EL34 outputs - clipping on this one isn't graceful - get a shattering sound if pushed with material having wide dynamics on a low efficiency speaker - this clipping looks bad on a scope - up to clipping it sounds very good - its possible the EL34 grid-input Z is dropping due to grid current - if so then larger grid-stopper resistors could soften the clipping.
From limited experience with push-pull and SE triode amps employing no loop negative feedback, they tend to sound "ok" when pushed beyond power rating - also they sound "better" than feedback designs within their power limitation - I never heard an ARC sound as good as my Eico ST-70 iron running ppp-6BX7 - very nice 8 watts
