I have an old Windows XP box that's air gapped from the Internet. I installed an M-Audio 2496 sound card, which has RCA inputs and outputs.
The PC is connected to the preamp's tape loop, like a cassette recorder would have been 35 years ago.
I use an old shareware to rip the LPs. It was designed specifically for ripping LPs--splitting tracks, de-clicking, even has the ability to remix to a certain extent--but it only rips at Redbook. No hi-rez.
Which was fine because I only wanted the rips so that I could listen to my LP collection at work.
The blissful counterstroke-a considerable new message.
