Those would be polyphonic works, like Ockeghem (which is beautiful) but I was looking for a recording of the traditional chanted liturgy, which is much, much older. It would be hard to say how old exactly, but the Introit at least is in the Antiphonary of St. Gregory, which pushes it back to ~ AD 600 or even earlier.
The famous sequence 'Dies irae' is generally believed to be a later addition, usually attributed to Thomas of Celano, ca. 1200, but a few people think it also goes to St. Gregory's days.
