Will this work to record vinyl to digital?

A friend of mine is going to bring some of his father's LPs from France so that I can transfer them to digital so that he can listen on his PC. I've never done this before, in fact I've never even downloaded a song, so I want to make sure that this will work:

1) Play vinyl through ZYX cartridge and into preamplifier
2) Go from record out on preamplifier to Furutech GT-40 ADC
3) USB cable from Furutech to PC
4) Use Audacity free software to convert into digital files on my hard drive
5) Transfer from my hard drive onto my friend's portable hard drive

I think the last thing I have to decide is what file format to convert the files into. My friend said that he uses iTunes. He is not an audiophile in any way, but does know good sound as he is a highly trained musician (trumpet and voice) that sings professionally part time in a choir in Paris. So, I do want to have the files in a format that still sound pretty good.

So, will steps 1-5 above work, and what file format would you guys recommend for playback in iTunes (or some other free PC software)?
