Supposedly sockets add extra stray capacitance, which can act as a filter depending on the circuit. But my guess is that the actual amount of added capacitance is in the very low picofarads, which would put the turnover frequency somewhere in the megahertz range, again depending on the circuitry.To me, the big advantage is the ability to swap out different op-amps, almost like tube-rolling. I put sockets in all my DIY projects, and I'm very happy with the results--I never give it a second thought.
Obviously, you want to use premium-quality DIP sockets, with gold contacts. I prefer the type with the little wound spring in it (not sure of the exact nomenclature). Also, it's important to get the non-solder-wicking type.
