introduces feedback. Because of how it is derived and injected it greatly increases output impedance. Of course feedback also reduces gain.On paper it would be hard to defend the choice to remove bypass caps. But in actual practice, in circuits that can allow for it, many think it sounds best to remove them.
With your amp I'd be wary. Your output tubes need a lot of voltage to fully drive them. The 6SN7 likely doesn't have much headroom to spare.
I'd go with the advice you got and try a mills or tantalum resistor and a top grade cap (ideally film).
