Peter,I too have been struggling with this question. FWIW, let me share what I've learned:
1. For 2 channel listening, you are probably better off picking up a tube preamp (e.g., a Bottlehead Foreplay, or any number of used alternatives) to pair with your new amp -- you can run the preout from your HK through the tube preamp to your new amps for the occasional movie.
2. Rehabbing older equipment can produce sound that bests low cost alternatives (e.g., Jolida, ASL), but should be considered a labor of love as much as a low cost alternative to more modern options. I'm still waiting for someone to tell me whether a Dynaco ST70 or MkIII is an improvement over an Assemblage Amp 1 (which is easily available for $550), but frankly, I seriously doubt it.
3. Given your desire for roughly 30 watts (I think that your math is roughly correct), I'd consider getting a Dynaco ST70 if you'd like a vintage amp. These are by far the easiest vintage amps to modify and maintain (think network externalities here!), and can easily and reversibly be put into triode mode for better sound at the cost of some power. You might find that you can live with 15-17 watts, in which case you'll get improved detail/clarity. Otherwise, switching back is simple.
