Dear EDTA,
There are a couple of good reasons.1) The internal capacitance of the control rolls off the frequency response.
2) Stereo separation at high frequencies dimishes with single knob stereo controls. This results in the highs producing a signal in the other channel that it is not suppose to and producing power that isn't suppose to be produced.
When measuring one channels specs, it may be flat. But when both channels are operating, this high frequency "bleedthru" in the other channel produces power in that other channel that isn't suppose to be there. In otherwards, the frequency response changes and isn't flat anymore.
