Matthew,I think what you're describing are problems associated with most tube gear. Although fire seems a bit excessive, unless you have a Jadis... :)
I had a problem with my Jolida 502b during its first week. One of the transformers was bad and replaced by Jolida promptly. That's it. I bought this amp new in September 1998 and have been using it extensively (6-8 hours a day).
Most of us tweak these amps a lot, so excessive hum could occur if we make mistakes. I've never had a hum problem though. I can hear a faint hum if I stick my ear to the speakers. But that seems associated with the power tubes in use. KT-90 are the worst, followed close by Svetlana 6550. But the KR Enterprise KT-88 I'm using now are extremely quite (and sound wonderful).
I must disagree with your last statement. When shopping for this amp two years ago, the only integrated tube amps that I found here in NYC sounded more transparent than a stock 502b were the CJ an AR ones. The CJ being twice the price and sounding a bit on the dark side of neutral. And the AR triple the price and sounding thin.
I believe that the main strength of Jolida tube integrated amps are their potential for improvement. They're built to a certain price point (as most hi-fi products), but if one decides to upgrade a few parts the improvements are very rewarding and bring the Jolidas to the same class (maybe even higher) of a CJ, AR or VTL.
