How can we tell without knowing what your amp is? How many EL34s are there init? If only 4, then it's a classic push-pull circuit, and none are in parallel. If 8, then you most likely have what's known as a parallel push-pull amp.

Who rates an EL34 at 25 watts per channel? I believe youhave confused some terms here. An EL34 (one) has a maximum plate dissip[ation rating of 25 watts - that means that's how much power it can absorb before over heating and sooner or later self destructing.
How much power you can get from an EL34 is a totally different thing, in pure Class A a push-pul pair will give around 13-15 watts MAX, but with 800V on the plates and in Class B they can make 100 watts - although that's for PA usage, not hifi.
