The "fat bottle" 6CA7s are beam tetrodes, while the EL34s are true pentodes. With the EL34 you can play some tricks with the suppressor grid, for example Decware's "Hazen Grid Mod." In the default connection scheme where the suppressor is tied to the cathode by a piece of wire bridging pin 1 to pin 8, there is no significant difference between EL34 and 6CA7 (or KT77.) Of course, different makes-models-samples will have different bias points (as Jim said) and maybe different sound as well, but they are all the same tube type except for the fact the beam tetrodes don't use pin 1 (they have an internal connection instead.)
