A tube will have an instrinsic noise of its own, which cannot be reduced. When used in an amplifier, other components also add noise. Mostly resistors or other active devices.

In something like a phonostage you can definately hear the difference. Some tubes just not appropriate for input stage use (the most critical). They will "hiss" more than others.
