I'm not sure if it exists in an EL34, but regarding that same characteristic in signal tubes, I find the 6SN7 / VT231 RCA gray glass tubes give that signature. So if you happen to have a preamp that uses the 6SN7, you can use that tube and get some of that. That's what I do.

Regarding the top & bottom, power and midrange you desire, I think this is going to be more of a speaker problem and just an amp problem. I use a 96dB-efficient speaker that also has provision of driving a rear-firing 12" (passive) sub. So I drive the front drivers of the Sinfonia with my Rogue Atlas EL34 amp and I make up for the bass by driving the rear-firing 12" drivers with Antique Sound Labs Wave 8 (8wpc) tube monoblocks. Once I get this midrange dialed in with the right EL34 tube, then I'll have the bottom end, plus the 96-dB efficiency of the speaker makes the amps sound powerful. The highs are already there for me. So if you want all this, I think it has more to do with amp-speaker combo synergy than just tube rolling,... and we all know we still have to tube roll anyway.
