Thanks for the very good info on my problem and the suggested solutions. I just came across "the pseudo shunt" pot idea while browsing the web, another idea for me to try, after solving my 'too much gain' problem.
I have a lot of resistors in the range of 75k-150k ohms, so I will try and see which value offers the best value for my situation.
