You should definately go the "switchable" route if you are considering the change.My VTL amp uses EL34s, and has switchable triode/pentode. On some music (rock, ochestral compositions, etc), I enjoy the strength and control of the pentode mode, while on others (notably jazz and acoustic) I prefer the midrange smoothness of the triode mode.
There isn't THAT much difference however. The change is rather slight...
