Thanks for replying but I'm afraid I'm just following the manual blindly without understanding much. The instructions for biasing each tube (it's done separately for each EL84, four in total) are to place the voltmeter probes in the biasing slots and turn a biasing screw until the meter reads 200mV; however, as I said in the original post, I found the sound was much improved at 220mV with my original JJ tubes so now I'm wondering if that setting should be the same or similar for the EI's.
