I used to have an old KnightKit stereo preamp (ca 1960-61). It had level trimmers at each input under the chassis and on the front panel it had volume and gain controls. Wow! Knobs galore. Selector switch for stereo, stereo reverse, mono, left channel only and right channel only. Treble and bass controls plus switchable rumble filter and scratch filter. Sheesh. Other knobs that I can't remember what they did - maybe a selector for different phono equalization curves...You've already found what works best. Go with it. As long as the preamp and power amp stages aren't distorting, which they don't seem to be since you're not noting any problems, you're OK. You could separate the stages and take noise vs. gain measurements for each gain stage and compare them to the original specs, but that's probably not really useful in the real world.
A 96 dB speaker is pretty darn efficient and on old gear will make any hiss stand out. I guess you could replace all of the old carbon comp resistors with film resistors if you wanted to and drop the noise by a few dB. Or you could just watch the movie...
