If you're using them for coupling, and not as part of a filter network, I'd go with the .056 uF 500V ones, should do just fine, unless there is something very special about the circuit performance. Bigger coupling caps I think limit the amount of NFB but at Hi-Fi levels, this has not reared its head in my projects and I use .15 uF between a 6SN7 and a 6BL7....
