Well, EL34 wass developed as a hifi-audio tube, and should sound ...ehr... hifi. It was not ment to be run as a trode, but may very well be done to do it nice. One nice thing with using a EL34 is that it likes quite small loads at plate and is easy to drive (as pentode that is). But a EL34 amp can not without a major rebuild be used with 2A3 or other direct heated triodes (wrong OPT, B+ voltage, heater vs. direct heated, driver req etc.).
