Because my goal is to replicate the experience of a live music performance, even when I know that is not possible. But when I attend the local symphony or the many other musical performances in smaller venues, I do not experience precise placement of each instrument or voice the extent that recordings can, unless I'm seated directly in front of the stage.
Imagining/soundstaging has become a major criteria in judging home systems. I blame Harry Person for that since he was the first to place so much emphasis on that in his reviews. But when I learned he preferred to sit dead center, second or third row at Carnegie Hall then I could better understand his perspective. That is not my seating preference so it is not so important to me.
In addition, I believe that soundstaging is one of the easiest characteristics to observe so human nature pulls us toward it. And yes, precise placement across the stage can be fun, even exciting, but it is not what I hear in most concerts I attend.
