Niles Audio makes some decent in-walls at all price-points. I have the AT8700s ($1600ish) in the bedroom and they are surprisingly good. While our living room was being remodeled I got a listening jones and hooked about $50K worth of electronics to them (Wadia 207SE/27ix and Rowland 301 monoblocks) and was astounded at the result.... even got a nice 3D image out of them. Bass response was lacking, though. From there (price-wise) the James in-walls are also worth a look. Decent models start in the 3K range and go up to about $20K. I was seriously considering the "Grand Concerto" at one point.
One major issue that you'll have with in-walls is bass response. The larger James models address this with built-in self-amplified subs, but they are huge and expensive. James does make a very good in-wall sub for response down into the low 20s or an attic-mounted sub good for response into the low 30s.
