I think this conversation is a matter of perspective. For me, there is no way to miss the evolution of the White Stripes. It is a long, long way from the debut album of all hard garage rock and stuff like The Big Three Killed My Baby to get Behind Me Satan, which after the lead single, Blue Orchid, is primarily a subdued almost folky at points album full of piano and other instrumentation that was hardly hinted at when they started.

The other you mention that I asee as wholey unique is Sigur Ros. But, when you mention the lack of propolution it sounds like you are looking for something specific. They're simply not a rock band and they don't rely on getting you moving. Dynamics are their, particularly on their first album, but they are more of the sweeping type.
