I would start with Mozart's operas - his overtures will be familiar ground (assuming your symphonic tastes include that period!).Schwarzkopf is remarkable on Cosi fan tutte (Bohm - though it's the ensemble singing that I love about this opera), Le nozze di Figaro (Giulini - though I much prefer the version under Kleiber's direction).
I find it is not so much a specific singer but a particular conductor that will attract me to a piece. Often it is more the style of opera that may put one off rather than the talent of singer themself.
You can't go wrong with Mozart. His body of opera's, in particular, those above along with Don Giovanni and Die Zauberflote are perhaps the most important set of operas written - a balance of beautiful orchestration and voicing.
Welcome to opera. The language barrier is quickly overcome by the singing which transcends the the written text. Once smiiten, you may find you can't get enough of it!
