Chamber music help needed, pretty please.

Hello,
I am rebuilding my CD collection and this is a superb opportunity for me to acquire approximately 12-24 chamber music discs (could be more if I get hooked). I already have a number of solo piano recordings and I am quite familiar with the repertoire. I am looking for guidance regarding solo violin, solo cello, quartets, quintets, etc

So where to start? Bach Partitas? Haydn quartets (so many!), Mozart, Quartets or quintets? Beethoven sonatas or trios? Schubert? Brahms? Mendelssohn? ... HELP!

What I have already is listed below:

Schubert:
"Trout" Quintet,
String Trios D.471 & D.581
Quintet in C major

Bach:
suites for solo cello

Beethoven:
middle and late string quartets
sonatas for keyboard and cello

Mozart:
"Hunt" string quartet and string quartet in A major, K464
String quartet in D major, K499 and string quartet in B flat major, K589

Rachmaninov:
Cello Sonata op19

Haydn:
Sun quartets 1-3
