Sudbin's first Scarlatti disc on BIS has outstanding sound and beautiful performances (his second disc has inferior sound and a much more affected way of playing these pieces). While I'm on the subject of Scarlatti, the Babayan recording is well worth seeking out.
Other piano favorites of mine with great sound are Nojima's Liszt disc on Reference (I haven't heard the HDCD remastered version) and Hewitt's Ravel set on Hyperion.
