A few unmentioned

The top of my list is Rachmaninoff's Symphony No. 1. There are few symphonies that can match the sheer power and excitement of the final movement. But many recordings suck. Go with Ormandy, Ashkenazy or Rozhdestvensky.

Tubin's Symphony No. 3 is a good example of just how much we've lost by narrowing the core repertoire of modern concert and radio play to a few warhorses.

Gliere's Symphony No. 3 "Ilya Murometz" takes a more subtle approach to the heroic. Farberman's recording most closely follows Gliere's tempo markings, but many prefer the brisker tempi of Downes. Most other recordings are either cut to pieces or crappy audio.
