how loud do you play "dynamic" symphony music?

Some romantic music has huge dynamic swings from soft to loud. If I set the volume so that the soft parts are soft, but easy to hear, the loud parts can be deafening. I don't have a dB meter, and I guess not many of us do. But what practices do you use to make sure you hear all the music without playing at earsplitting levels?
